ONE TASTE AT A TIME
Sea urchins
You have to admit, it’s a bold choice to start a post with this! Just pick them up from the sea, because they must be still moving when you start the preparation process. So, next step is to crack the shell, and take out everything except the orange stuff (it’s actually caviar, but this is more fun way to call it). And there you go! The orange stuff tastes like the sea itself, and the best way to eat it is with some lemon and olive oil on a piece of grilled bread!
Black risotto
Alright now, hear us out. This is actually a cuttlefish risotto and the black colour comes from its ink. This is an authentic and world-renowned dish, with every bite bringing freshness and a unique taste that will stay with for good. Couple of dollops of aromatic Dalmatian olive oil, and you’re good to go!
Prosciutto
Ask any Dalmatian if they could be vegetarian, and the most common argument will be – how could you possibly live without prosciutto?! It’s a region staple, with salty and rich red meat parts, and soft, melty white fatty parts. Enough already – just go for it!
